  1. Read and translate the text the cook

Giles Mild/nay, 24, has been a professional cook for three years. He and his father talk about his choice of career.

Giles

I think I've always been interested in cookery. My grandparents (on my mother's side) lived in a huge old manor house in Lincolnshire and they had a wonderful cook. She made fantastic standard English food: her roast beef and Yorkshire pudding was out of this world. I used to love going down to the kitchen and watching her work, andpicked up a lot of cooking tips from her. I realised that I wanted to be a cook when I was about 12. I went to a boarding school and when other boys chose to do sport, I chose cookery. By the time I was 15, I had taken over the cooking at home for my parents' dinner parties, and I had started to make up my own recipes. I knew my parents would not approve of cooking as a career, so I decided to introduce them slowly to the idea. I told them that I wanted to do a cookery course for fun, and I went for a month to a hotel in Torquay. I enjoyed it so much. I knew I couldn't put off telling my parents any longer, so I brought the subject up one night over dinner. At first there was silence, and then my father asked me why. I explained that cooking was like painting a picture or writing a book. Every meal was act of creation. I could see that my father was not convinced, but he didn't get angry he just patted me on the shoulder and smiled. My mother kissed me. And now that I have opened my own restaurant, I think they are very proud of me. However, my grandfather (on my father's side) is not so kind, he thinksI'm mad to have given up farming.

Giles' father

I know that times have changed, but I was brought up with a butler and a cook to look after me, and I never went near the kitchen.

I was taken aback at first when Giles announced what he wanted to do. His grandfather still hasn't got over it, but his mother and 1 are delighted that he is doing something he enjoys.

Nowadays anyone with a job that he enjoys very lucky.

Text At the Kherson Higher Vocational Commercial College

Every year many young people enter higher educational establishments. Those who really care for trade and catering enter Institutes of Trade or Institutes of Catering and become students. We are students of the Kherson Higher Vocational Commercial College. At the College a new life begins. It is the life of the adult who is responsible for all his actions before the society.

Some students live with their relatives but those who came from other towns live at the hostel.

In our country education is free of charge and many students get stipends. If a student has “fives” in all the subjects he gets an increased stipend. The students who chose technology and organization of public catering as a future profession have an opportunity to work much not only in class but at the College laboratories and libraries. Some students may join students’ scientific society. The society organizes conferences and scientific contests on those subjects which students care for. It helps to support students’ interest in getting deep knowledge in Chemistry, English, History and other subjects.

Those who want to widen their knowledge must pay attention to latest articles on food technology and economics. It means that students must study not only their textbooks but read many special articles in Ukrainian and foreign languages. It is the Foreign Language Society which can help the students to increase their knowledge and widen their outlook.

The course of studies in the Kherson Higher Vocational Commercial College is two years. During this period we get the basis of theoretical and practical knowledge on different subjects.

We have practical classes in numerous special subjects. We specialize in such subjects as technology of cooking, organization of public catering and others. We perform different laboratory works and attend lectures. The teaches deliver the lectures clearly and scientifically. That is why it is useful to us to listen to these lectures.

We know that we shall need deep knowledge in our future work. And only hard work will give us the possibility to gain the knowledge. That is why there are always many students in the College laboratories.

We have two terms in the academic year. Each term lasts for about 18 weeks. At the end of the winter term we shall take examinations in Mathematics and Chemistry. Also we shall have some credit tests. The winter holidays last from the end of January till the middle of February. At the end of spring term we shall have examinations in English and Chemistry. If we want to pass our first examination session successfully it is necessary for us to work hard from the very beginning of the academic year, for “A good beginning makes a good ending”.

At the examination the students take the examination cards and have some time to prepare for their answers. The cards usually contain all the things we study during the term.

When the first examination session is over we are tired but happy. Winter rest 3 at a sports camp is waiting for us.
